Southern Fried Lion's Mane
Yields: 2-3 servings Prep time: 30 minutes Cook time: 30 minutes
Ingredients:
Lion's Mane Steaks
1.8-2.5 oz Lion's Mane mushroom pieces per steak
3 Tbsp coconut aminos
2 Tbsp olive oil
1 tsp minced onion
1 tsp parsley flakes
Wet Batter
1.5 cups unsweetened plant-based milk
6 Tbsp liquid vegan egg
1 cup spelt flour OR wheat flour
3 tsp granulated garlic powder
2 tsp granulated onion powder
2 tsp paprika
1/2 tsp black pepper
1/2 tsp celery seed
1/2 tsp turmeric
Salt to taste
Dry Batter
1 cup panko bread crumbs
1 tsp cayenne pepper
1 tsp granulated garlic powder
2 tsp granulated onion powder
1 tsp parsley flakes
Salt and pepper to taste
Gravy
1/4 cup vegan butter
1/4 cup spelt flour OR wheat flour
1 cup vegetable broth
Salt and pepper to taste
Additional Ingredients
Mashed potatoes
Broccoli
Frying oil
Instructions:
Prepare Lion's Mane: Clean Lion's Mane mushrooms. Use clusters about 1.8-2.5 ounces in size. Cook in a pan without oil until all water evaporates.
Marinate: Combine marinade ingredients. Marinate Lion's Mane steaks for 1-2 hours.
Make batters: Combine wet batter ingredients in one bowl and dry batter ingredients in another.
Coat steaks: Dip marinated Lion's Mane steaks in wet batter, then dry batter.
Fry steaks: Fry coated steaks in hot oil until crispy.
Make gravy: Melt vegan butter in a pot. Whisk in flour until golden brown. Gradually whisk in vegetable broth until thickened. Season with salt and pepper.
Serve: Pour gravy over crispy Lion's Mane steaks. Serve with mashed potatoes and broccoli.
