Ingredients:

  • 1 pound pink oyster mushrooms, torn into bite-sized pieces

  • 2 tablespoons liquid smoke

  • 2 tablespoons soy sauce or tamari

  • 1 tablespoon maple syrup

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon black pepper

  • 4 slices your favorite bread

  • 4 slices ripe tomato

  • 4 leaves lettuce

  • Mayonnaise, for spreading

  • Avocado, optional

Instructions:

  1. Prepare the mushroom bacon: In a large bowl, combine pink oyster mushrooms, liquid smoke, soy sauce, maple syrup, garlic powder, smoked paprika, and black pepper. Toss to coat.

  2. Cook the mushroom bacon: Heat a large skillet over medium-high heat. Add the mushroom mixture and cook, stirring occasionally, until the mushrooms are crispy and the liquid has evaporated.

  3. Assemble the sandwiches: Toast bread to your desired level of crispiness. Spread mayonnaise on one side of each bread slice.

  4. Layer the sandwich: Place lettuce, tomato, and mushroom bacon on the mayonnaise side of one bread slice. Top with the other slice of bread.
