Yields: 2 sandwiches Prep time: 15 minutes Cook time: 10 minutes
Ingredients:
1 pound pink oyster mushrooms, torn into bite-sized pieces
2 tablespoons liquid smoke
2 tablespoons soy sauce or tamari
1 tablespoon maple syrup
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon black pepper
4 slices your favorite bread
4 slices ripe tomato
4 leaves lettuce
Mayonnaise, for spreading
Avocado, optional
Instructions:
Prepare the mushroom bacon: In a large bowl, combine pink oyster mushrooms, liquid smoke, soy sauce, maple syrup, garlic powder, smoked paprika, and black pepper. Toss to coat.
Cook the mushroom bacon: Heat a large skillet over medium-high heat. Add the mushroom mixture and cook, stirring occasionally, until the mushrooms are crispy and the liquid has evaporated.
Assemble the sandwiches: Toast bread to your desired level of crispiness. Spread mayonnaise on one side of each bread slice.
Layer the sandwich: Place lettuce, tomato, and mushroom bacon on the mayonnaise side of one bread slice. Top with the other slice of bread.
Optional: Add avocado slices for extra richness.
