Mane Attraction Cakes
Yields: Approximately 4 cakes Prep time: 30 minutes Cook time: 15-20 minutes
Ingredients:
8 oz Lion's Mane mushroom
3 Tbsp liquid vegan eggs
1 Tbsp vegan mayonnaise
1/4 cup finely chopped white onion
1 tsp Worcestershire sauce
3/4 tsp Old Bay seasoning
1 tsp Dijon mustard
1 Tbsp finely chopped parsley
Juice of half lemon
Salt and pepper to taste
1/4-1/2 cup panko bread crumbs
Frying oil
Cajun-Style Aioli
1/4 cup vegan mayonnaise
1 Tbsp finely chopped capers
1/4-1/2 tsp Old Bay seasoning
Garnish
Fresh parsley
Lemon wedges
Instructions:
Prepare Lion's Mane: Pull apart Lion's Mane into small pieces resembling shredded meat. Cook in a grill/sauté pan with a pinch of salt and pepper until all water evaporates.
Make cake mixture: In a large bowl, combine vegan eggs, mayo, onion, Worcestershire sauce, Old Bay, Dijon mustard, parsley, lemon juice, salt, and pepper. Mix well. Add cooked Lion's Mane and stir to combine. Gradually incorporate panko bread crumbs until mixture holds together.
Form cakes: Shape mixture into desired size patties.
Cook cakes: Heat oil in a frying pan over medium-high heat. Cook cakes until golden brown on both sides.
Make aioli: Combine vegan mayo, capers, and Old Bay in a small bowl.
Serve: Garnish with parsley and lemon wedges. Serve with Cajun-style aioli.
