If you don't have any fresh lion's mane on hand, you can easily **purchase some from our online store** or visit your local farmers market to find this unique mushroom.

Ingredients:
Dry Batter:
* 1/4 cup crushed crackers (Ritz, saltines, etc.) _OR_ 1 nori sheet (for vegan option)
* 1 tablespoon cornstarch
* 1 teaspoon parsley
* 1 teaspoon thyme
Wet Batter:
* 1 teaspoon Old Bay seasoning
* 1 cup all-purpose flour
* 1 teaspoon dill
* 2 teaspoons smoked paprika
* 2 teaspoons onion powder
* 1 cup sparkling water _OR_ beer
* 1 cup cornstarch
* Salt and pepper to taste
Tartar Sauce:
* 2 tablespoons lemon juice
* 2 tablespoons pickle relish (dill or sweet)
* 1/2 cup mayonnaise _OR_ vegan mayonnaise
* 1 teaspoon fresh dill (optional)
Additional Ingredients:
* 2 (2.5 oz) fresh lion's mane mushrooms
* 1 teaspoon Old Bay seasoning
* 2 brioche buns _OR_ vegan buns
* Slices of cheddar cheese _OR_ vegan cheese
* Vegetable oil for frying
Instructions:
1. **Prep the lion's mane:** Trim any rough edges or tough base from your lion's mane mushrooms. Separate them into two 2.5-ounce pieces, or cut them into smaller, fillet-sized pieces.
2. **Cook the lion's mane:** In a skillet over medium heat, cook the lion's mane pieces, pressing down gently to release moisture. Sprinkle with Old Bay seasoning on both sides and cook for 3-4 minutes per side, or until browned.
3. **Prepare the batters and sauce:** Follow steps 3-5 from the previous recipe to prepare your dry batter, wet batter, and tartar sauce.
4. **Heat the oil:** In a deep skillet or pot, heat about 1 inch of oil to 370°F.
5. **Batter and fry:** Dip each lion's mane piece in the dry batter, then the wet batter. Carefully lower into the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
6. **Assemble the sandwiches:** Split and lightly toast your buns. Place a fried lion's mane fillet on each bottom bun, top with cheese, tartar sauce, and the top bun.
